Black Bean Burgers
Ingredients

1 can black beans, drained

1 carrot, grated
-
1 onion, diced
-
3 medium potatoes grated

1 cup sweetcorn
-
½ tsp garlic salt(or puree, adjust to taste)

Salt and pepper

1 Tsp mixed herbs
-
2 tbsp olive oil (for frying)
Method

Mash the beans
-
Add all the remaining ingredients (except the oil) with a generous sprinkle of salt and pepper
-
Make the mixture into small patties about ½ inch thick
-
Fry the patties in the olive oil over a medium/high heat for about 3 minutes on each side
Serve with mug bread/pitta bread or on their own with salad and/or tomato relish.
