Breakfast Flapjack

This tasty combination of dates, banana, oats and coconut oil brings together some of the most nutrient-dense of nature’s ingredients, which means you can start your day with a healthy boost of vitamins, minerals, fibre, protein and ‘clean energy’.

Ingredients

  • 100g pitted dates soaked in 100g boiling water

  • 85g ripe banana

  • 1tsp vanilla extract

  • 50g coconut oil

  • ½ tsp bicarb of soda

  • 250g gluten-free oats

Method

  • Place dates in a bowl with the boiling water and leave to soak for at least 5 minutes

  • Once soaked, dip the dates and water into a food processor along with the banana, melted coconut oil, vanilla extract and bicarb of soda. Process until smooth

  • Tip the paste into a bowl and add the oats

  • Stir well and place the mixture into a greased ovenproof dish approx 20x15cm

  • Bake at 180 degrees, 160 fan, gas mark 4 for approx 25 minutes until golden and firm.

Allow to cool and cut into slices, store in an airtight container for up to 4 days
