Overnight Oats

There are lots of variations on this quick easy breakfast formula. Here’s one based on the BBC website, but you can mix and match your ingredients to suit you, using the soaked porridge oats as a base. Cinnamon helps to balance blood sugar, whilst raw honey contains a range of useful nutrients and can help aid digestion. Make sure you look for RAW honey (you can buy online or from beekeepers) as supermarket-bought honey is processed in ways that reduce its benefits.

Ingredients:

  • ¼ tsp ground cinnamon (optional)

  • 50g rolled porridge oats

  • 2 tbsp live natural yoghurt, dairy or non-dairy

  • 50g mixed berries

  • Drizzle of raw honey

  • 100 ml water or any type of milk

  • ½ tbsp nut butter(optional)

Method:

  • The night before serving, stir the cinnamon and 100ml water (or milk) into your oats with a pinch of salt.

  • The next day, loosen with a little more water (or milk) if needed. Top with the yoghurt, berries, a drizzle of honey and the nut butter.
